Legend has it that an Arabian shepherd named Kaldi found his goats dancing joyously around a dark green leafed shrub with bright red cherries in the southern tip of the Arabian Peninsula. Kaldi soon determined that it was the bright red cherries on the shrub that were causing the peculiar euphoria and after trying the cherries himself, he learned of their powerful effect. The stimulating effect was then exploited by monks at a local monastery to stay awake during extended hours of prayer and distributed to other monasteries around the world. Coffee was born.

Despite the appeal of such a legend, recent botanical evidence suggests a different coffee bean origin. This evidence indicates that the history of the coffee bean began on the plateaus of central Ethiopia and somehow must have been brought to Yemen where it was cultivated since the 6th century. Upon introduction of the first coffee houses in Cairo and Mecca coffee became a passion rather than just a stimulant.

History has it other Africans of the same era fueled up on protein-rich coffee-and-animal-fat balls-primitive PowerBars-and unwound with wine made from coffee-berry pulp. Coffee later crossed the Red Sea to Arabia, where Starbucks noticed. Coffee as we know it kicked off in Arabia, where roasted beans were first brewed around A.D. 1000. By the 13th century Muslims were drinking coffee religiously. The “bean broth” drove dervishes into orbit, kept worshipers awake, and splashed over into secular life. And wherever Islam went, coffee went too: North Africa (map), the eastern Mediterranean, and India Arabia made export beans infertile by parching or boiling, and it is said that no coffee seed sprouted outside Africa or Arabia until the 1600s-until Baba Budan. As tradition has it, this Indian pilgrim-cum-smuggler left Mecca with fertile seeds strapped to his belly. Baba’s beans bore fruit and initiated an agricultural expansion that would soon reach Europe’s colonies…

Jamaican Blue Mountain Coffee – A Tradition of Quality Like No Other!



What is so special about Jamaica’s Blue Mountain Coffee besides being one of the most critically acclaimed and expensive types of coffee in the world?

This coffee has light color and rich flavor. It is known for its full body and mild flavor without any bitterness. Only coffee grown in four districts or parishes between 3,000 and 5,000 feet in altitude qualifies to carry the Jamaican Blue Mountain Coffee certification. This coffee is separated by five grades based on bean size, lack of defects, and quality of flavor profile. In addition, only a small quantity of high quality Blue Mountain Coffee is produced each year.

Demand is high, supply is low. As a result, it commands a premium price. The top grade is designed as specialty coffee. It is interesting to note that Jamaican Blue Mountain green coffee is the only coffee in the world that is shipped in oak barrels similar to fine wines. The oak barrels help preserve and maintain the unique characteristics of the green coffee, a secret wine producers have known for a very long time. Blue Mountain Coffee also contains less caffeine than any other commercially grown coffee species.

Before coffee can be labeled “Blue Mountain Coffee,” it has to meet a strict set of certification requirements. This ensures that buyers get their money’s worth when buying the quality gourmet coffee they expect. Most Jamaican coffee grows on the once forested lower slopes of the Blue Mountains. Coffee harvested at 3,000 to 5,000 feet in altitude is Jamaican Blue Mountain Coffee. Coffee harvested at 1,500 to 3,000 feet is certified as Jamaica High Mountain Coffee. Coffee harvested at 1,500 feet and below is certified as Jamaica Supreme or Jamaica Low Mountain Coffee.

The two largest coffee producers in Jamaica are Wallenford Estate and the Moy Hall Cooperative. At one time, Wallenford Estate was one of the most celebrated and best of Jamaican Blue Mountain coffee. Nowadays, the term Wallenford Estate refers to any Jamaican Blue Mountain coffee from Wallensford mill. The Moy Hall Cooperative has about 1,500 small coffee farmers supplying cherries to the Moy Hall Coffee Factory in Cedar Valley. The staff members, many of them coffee farmers, jealously follow the Jamaica Coffee Industry Board standards in order to maintain the prized certification labels for their coffee. This, in turn, translates into higher prices for their crops. The coffee reaping, selection, floating, re-floating, measurement, drying, grading, picking and sorting before export is a very involved but necessary process that guarantees coffee quality from the bean to the cup. 90% of all Jamaican coffee production is exported to Japan, the US and Europe.

Fortunately, the tradition of “backwoods growers and roasters” remains very much alive in Jamaica. Some local farmers continue to hand pick their own ripe berries, dry them, cure them and roast them in a traditional and time consuming way.

When in Jamaica, you may notice coffee farmers selling their own coffee along roadsides or from their own coffee farms. If you have the opportunity to stop and visit with one of Jamaica’s “backwoods growers” who still roast the old-fashioned way and sell their harvest directly to locals and visitors, be sure to stop and enjoy such unique experience. Usually, what happens is you just stumble upon such opportunity.

Backwoods growers do not advertise or even have signs “out front.” So, how do you know they are there?

Recipes From Your Coffee Maker



If you love your coffee, you will love dishes made from coffee. There are many dishes that use the wonderful taste of coffee as their main component. Let your coffee maker help you prepare your meals.

Most people think of using coffee to make desserts-and there are great recipes for that-but coffee adds a distinctive flavor to many other dishes as well. You can make barbecue sauces and glazes for meats, and put coffee in chili and pot roast recipes, to name a few.

Just as you use other fresh ingredients in your recipes, you should be sure the coffee you use is fresh. Either buy freshly ground coffee or grind your own, with your coffee grinding machine. If the recipe calls for brewed coffee, brew it just before you use it; don’t use your leftover coffee for this. Most of the recipes using coffee use coffee that is 2-3 times stronger than drinking coffee, since the flavor is going to be blended. So here are a few of the wonderful recipes using coffee:

Coffee Meatloaf Sauce: Add a tablespoon of instant coffee to a blend of the following ingredients: a quarter cup of water, a half a cup of ketchup, a quarter cup of dry red wine, a quarter cup of Worcestershire sauce, two teaspoons of vinegar, an ounce of margarine, two tablespoons of lemon juice and a teaspoon of brown sugar. Cook your favorite meatloaf recipe, but after about 1/2 hour of cooking, pour this sauce over it and continue baking for 45 minutes more at 375 degrees (190C) for tender, delicious meatloaf.

Espresso Brownies: Gently heat a cup of sugar, a quarter teaspoon of salt, and a stick and a half of butter in a sauce pan; add a teaspoon of vanilla, four ounces of chopped, semi-sweet chocolate and stir until melted in. Add a tablespoon of dark roast coffee. If you would like to add a crunch, add two teaspoons of espresso granules. Mix everything together and let cool, fold in three eggs and a cup of flour. Pour into a rectangular baking pan, bake for 30 minutes and set out to cool. Perfect brownies every time!

Black Russian Cake: Make dark chocolate cake mix, your own or from a box, and add a cup of vegetable oil, a package of instant chocolate pudding, four eggs, and a half a cup of creme de cacao. To this mix, add a cup of Russian coffee. (A cup of black coffee with an ounce of vodka and an 1/2 ounce of Kahlua added.) Beat well and put into a tube pan and bake for 45 minutes. Your guests will love this switch from Black Forest Cake.

You can even enjoy great cocktails using coffee; Kahlua is only one of many. If you want to be able to add coffee to just about everything you like, try making your own coffee syrup.

There’s even a recipe for coffee syrup. Combine a cup of sugar with a cup of double strength Colombian coffee. Boil, stirring constantly until the sugar dissolved. Lower heat, simmer and stir for three minutes, then cool. You can put this flavoring into almost any of your favorite dishes and add the special touch of coffee.

1. Pick a gift basket that reflects what they care about. Are they into “green” living? Prevent Teeth Staining

When drinking a beverage like soda or juice that can stain your teeth try using a straw. This will eliminate the direct staining to your teeth.
